Gift-giving can be a year long thing. Coming up with new ideas for gifts for Teachers or friends can be difficult at times. People love to homemade cakes and gifts, so why not combine the two and make someone you love very happy! This cake recipe is such a comfort food and this easy recipe will make someone’s day very happy when they receive this already baked cake as a gift in a jar.
Step 1 In a large mixing bowl, cream together with electric mixer, 2 2/3 C sugar, and a 2/3 C shortening. Add 4 large eggs and mix well. Add 2/3 C water and 1/2 t. vanilla and mix well.
Step 2 In another large mixing bowl, combine with whisk, 3 1/2 C. flour, 1/2 t. baking powder, 2 t. baking soda.
Step 3 Add wet ingredients to dry ingredients and mix with a wooden spoon.
Step 4 Gently stir 2 C sweetened flaked coconut into batter.
Step 5 Place 1 C batter (1/2 full) each in 8 well-greased one pint wide-mouthed Mason or Ball canning jars. Use up all the batter. Wipe batter from rims.
Step 6 Place jars on a baking sheet. Bake at 325 degrees for 45 minutes or until a toothpick inserted in the middle comes out clean.
Step 7 Place hot sterilized seals and rings on hot jars. Jars will vacuum seal themselves. Bread will keep up to a year.
Step 8 When cooled, Decorate your Gift Jars any way you wish.
Step 9 When the gift getter opens the jar, the bread should easily slip out and they can easily slice off a 1/2 inch think slice against them rim of the jar for even slices.
