Bake Pecan Pie Bars

This is a great dessert to take to a party. If you like Pecan pie, you’ll love these delicious easy to make bars. With the addition of oats, it is budget friendly. Try them today and see if you like them. I made this recipe up all by myself in the 1990’s for a contest. They didn’t win, but the dessert is still a winner in our home. Have fun and happy baking these great bars for your family or friends!!

Step 1

For the crust: In a large mixing bowl, Stir together 1 1/2 C flour, 1/4 C powdered sugar, and 1/4 C pecan crumbs. Add 1 1/2 Sticks softened butter and mix into a dough. Cover bowl tightly and chill for 30 minutes in refrigerator.

Step 2
Preheat oven to 350 degrees.

Step 3
Press dough into bottom of an ungreased 9 X 13 inch pan to form crust. Bake for 20 minutes until it is a light golden brown.

Step 4
Meanwhile, prepare pecan oat filling: In a large mixing bowl, mix together 1/2 stick softened butter, 1 3/4 C packed light brown sugar, 3 large eggs, 1 T. Pure vanilla Extract, 1/4 C dark corn syrup, 1 C Quaker Quick Oats (lightly fill, don’t pack), 1/2 C sweetened coconut, 2/3 C. pecan pieces.

Step 5
When crust is done, remove pan and lower oven temperature to 325 degrees. Pour pecan oat filling over crust. Return pan to oven and bake for 35-40 minutes, until brown and filling is set. Cool. Cut into bars. Store tightly covered at room temperature.
