Southwestern Shepherd Pie Recipe

I don’t eat ground beef so I altered it using Pride of the Farm taco flavored ground turkey. But if you eat ground beef use it.  Let me show you how to make Southwestern Shepherd’s Pie so you can make it for your next family dinner.

Things You’ll Need:

  • 2 Tbsp olive oil
  • 1 medium onion, diced
  • 1 small diced green bell pepper
  • 1 Tbsp minced garlic
  • 1 Tbsp chopped green jalapeno
  • 1 lb. ground beef/ground turkey
  • 1 Tbsp tomato paste
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper (to taste)
  • 2 cups diced tomatoes
  • 1/2 cup corn (canned/frozen)
  • 1/2 cup black beans (canned or dried)
  • 1/4 cup chopped cilantro
  • 1 1/2 lbs. sweet potatoes, peeled and cut
  • 2 Tbsp butter
  • 1/2 cup milk

  1. Preheat your oven to 400 degrees.
  2. Wash, peel and cut your sweet potatoes into chunks. Put your sweet potatoes in a pan with enough water to cover. Bring to a boil, reduce heat, and simmer for 30 minutes.
  3. In a large pan heat olive oil over medium heat. Add the onion and bell pepper, cook and stir for 10 minutes. Stir in garlic and jalapeno cook for additional 2 minutes. Raise heat to medium-high; add ground beef/ground turkey and brown for approx 5 minutes.
  4. Add tomato paste, chili powder, cumin and cinnamon. Cook and stir for 2 minutes. Add tomatoes; simmer until liquid reduces approx 15 minutes. Add corn, black beans, and 4 Tbsp cilantro. Spoon into a 9×9-inch baking dish.
  5. Drain the water off the cooked sweet potatoes, mash with butter and milk. Spread mashed potatoes over the meat mixture. Bake 30 minutes in a 400°F oven or until brown. If you wish you can garnish with more cilantro.
