Pumpkin soup with carrots for vegetarians as well as for everybody who likes healthy soups. The soup is suitable for every age even for small children.

This soup is very easy for preparation. You do not need lots of time for prepation of the soup. The time for preparing it is an hour. The soup is tasty and healthy. It serves 4.

Ingredients:

600 gr pumpkin

½ cup (about 150 gr) rice

2 middle-sized carrots

2 tea spoons olive oil or oil

Salt to taste

Black pepper powder

1 cup (about 200 gr) milk

1 bunch of parsley

Method of preparation:

Wash the pumpkin and cut it into big pieces. Then peel the pieces and cut them into cubes. Put them into water previously prepared with salt. Boil the pumpkin pieces until mild. Meanwhile wash the rice and be ready to add it to the pumpkin when it is mild enough. Add a cup of water and continue boiling. After 10 minutes add some salt and sprinkle some black pepper powder to taste. When the rice is cooked add the milk, 5 minutes later you have to add the oil. Cook for other 5 minutes. Meanwhile prepare the parsley. Wash it and chop very finely. Add the parsley to the soup and cook for 5 minutes. You can serve your soup with croutons or fried loaves of bread. Preparing the fried loaves of bread is easy. You have to stir 2 or 3 eggs into a bowl and place the loaves of bread into them. Then fry in preheated oil. Enjoy this delicious soup!
