How to Make Sapin-Sapin

What is Sapin Sapin?  Sapin-Sapin is a Filipino delicacy made of rice flour, yam and coconut.  It is usually 3 layers: orange, white and purple.  It is a very popular Philippine dessert and is enjoyed by many Filipinos around the world.

Ingredients:

2 cups glutinous rice flour

3 cups rice flour

2 3/4 cups sugar

4 ½ cups coconut cream (this can be bought in tetra packs)

1 cup ube or purple yam (this can be bought frozen. Thaw completely before using.)

1/8 tsp orange food color

1/8 tsp ube food color

Toasted coconut for topping

Method to Cook the Sapin Sapin:

  1. In a bowl, mix the glutinous rice flour and the rice flour.
  2. Add sugar and coconut cream.
  3. Divide this mixture into 3 separate bowls.
  4. On the first bowl, add the orange food color and mix well.  This will be the bottom most layer.  Pour this mixture into a greased round pan (about 9 inches).
  5. Cover the pan with a cloth and steam over high heat for about 20 minutes or until firm.
  6. Pour the second mixture in.  This will be the second layer and it’s white.
  7. Steam again for another 20 minutes.
  8. Next it’s time to prepare the 3rd layer.  On the 3rd mixture, add the ube and ube food color.  Mix well.
  9. When the second layer is cooked and firm, pour in the 3rd layer.
  10. Cover the pan with a cloth and steam over high heat for about 20 minutes until firm.
  11. Let cool.
  12. Transfer the Sapin Sapin to a plate, and garnish the top with toasted coconut.
