Deviled eggs are the favorite of many a family. For some silly, unknown reason we only seem to make deviled eggs for family reunions, holidays or cook outs. 1 dozen eggs
1 1/2 tablespoon salad dressing
1 teaspoon mustard
1 teaspoon finely diced onion
1 teaspoon sweet pickle relish
1 teaspoon diced ham
1 teaspoon finely diced celery
1 teaspoon sugar
dash of lemon pepper
cajon seasoning or ground red pepper
Place the one dozen eggs into a large stew pan add enough water to completely cover the one dozen eggs. Bring to a rapid boil. Boil for 6 minutes. Remove from heat and carefully drain of the boiling water from the eggs. Take a spoon or other device and crack the eggs. Add enough water and ice to cover the eggs and let cool completely, usually about 10 minutes. Once the eggs are cool, remove the shell. The ice water soak makes this job a lot easier.
When you have the shell removed from your one dozen eggs, cut them in half, longways and scoop out the yolk into a small mixing bowl. Mash the yolk with a fork until thoroughly crumbled. Add the salad dressing, mustard, onion, pickle relish, ham, celery, sugar and lemon pepper. stir until completed blended.
Using a teaspoon, scoop enough of the egg filling to fill the depression in the egg, where you removed the yolk. Mound it up, you will have plenty of egg filling! When you have filled all 24 egg halves, arrange them on a serving tray and generously sprinkle the cajun seasoning or ground red pepper on top. Now all you have to do is enjoy these delicious deviled eggs!
