How to Make Apricot Crepes

The following are the items and ingredients that you will need:

Electric Mixer

Microwaveable bowls

Non stick Skillet

For the batter:

3 large eggs

1 ½ cup fat free milk

1 cup of flour

2 tablespoons of melted butter

For filling:

1 cup of apricot fruit spread

2 tablespoons of melted butter

1 cup of vanilla yogurt

½ cup of powdered sugar

These are also fun to make as you can make it a family event and cook them all together. The following recipe makes about eight crepes, so if you want more you need to adjust the ingredients, double them if you want sixteen:

Combine the eggs and milk in a mixing bowl and with an electric mixer mix for about a minute, then add the flour and mix for thirty second. Next add the two tablespoons of butter and mix for another thirty seconds until the batter is smooth and set aside for twenty minutes and this is your batter.

Then put the apricot fruit spread in a bowl and microwave for one to two minutes and stir it well.

Then get a skillet with a heavy bottom and heat it over medium heat for one minute, then brush the skillet with melted butter and pour in a quarter of the batter and rotating the skillet to coat evenly.

Cook the crepe for thirty seconds and then turn it over and cook for fifteen seconds, and remove it and place it on a dish and continue to make other crepes the same way. And now they are ready to enjoy and eat.
