Kabobs and Camping seem to go hand in hand. This recipe is for the enthusiast who just wants a more fancy meal in the outdoors from the usual hotdog dinner. It is easy to prepare ahead of time so all you have to do is skewer your ingredients and roast them. Serve these over a bed of rice if you really want a great meal. I would make the minute rice kind in the outdoors. Enjoy!
What You’ll Need:
- Hot Campfire
- long skewers
- Beef chunks
- Boneless chicken chunks
- cherry tomatoes
- small onions or 1″ onion slices
- whole mushroom
- Green or red pepper 1: slices
- Small red potatoes or potato slices
- canned pineapple chunks
- Bottled Italian Dressing
Ahead of time you want to put your meat cubes in a gallon sized ziplock and pour the Italian Dressing over them and seal. Place in cooler to marinate for at least an hour.
When fire is hot Skewer a piece of meat, then a potato, tomato, a green or red pepper, whole mushroom, pineapple, and repeat till the skewer is full but still has a nice long handle to hold over the fire to cook.
Baste more dressing over the skewered food to coat. Place skewered food over hot coals on grill or fire and turn occasionally to evenly cook them.
Stick a fork in them to see when they are done. Constantly rotate them to ensure even cooking. Should be done after a half an hour.
Pour out leftover dressing and bag since raw meat was in there. Marinating with it is ok since it is being cooked by a hot fire. Enjoy!
