2 cups brown sugar
2 sticks or 1 cup butter
1/4 cup golden syrup
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract (or more as you like)
Method to prepare popcorn:
Pour a layer popcorn kernels in a saucepan with lid. Put in the cooking oil inside the saucepan, just above the popcorn. Put the lid on and wait for the popcorn to pop. Leave a little room for the steam to come out. This would take about 5minutes once the oil is heated. Once the popping slows down, take them out and set aside.
Method for caramel mixture:
Preheat your oven at 150C or 300F. Prepare lined baking sheets for 2 flat trays.
In a saucepan or small pot, melt the butter. Put in the brown sugar and golden syrup and stir well until boiled in medium heat. Leave it to boil for another 4 minutes without stirring (otherwise it will crystallise). Set aside.
Then put in salt, vanilla and baking powder, combine.
Pour them over the popcorn and mix well so that most of the popcorn will get the caramel mixture.
Once done, place the popcorns on the flat tray lined with baking sheet. Bake in the oven for at least 15 minutes to one hour to get them crunchier. If you want to bake them for one hour, make sure you stir them around every 15 minutes.(Bake less if you want your popcorns chewy).
After taking them out, combine them again and leave them to cool. Separate them once cooled and store in air tight containers if you have left overs.
