Feeding a large group of people and need easy recipes for a crowd? I’m including many and this one is for a Fruit Cocktail Cake. Makes FOUR pans sized 18 X 26 X 2 inches or about 320 servings of 80 pieces per pan, if you will. Check out my many other recipes for crowds in Bukisa. You don’t have to worry about doing the math. It is done for you.
Go to a Food Warehouse or Food Club to purchase your large quantities like Sam’s Club, Gordon Foods, or other places. You can often sign up for an account and they can give you discounts for large quantity purchases. If you are a not-for-profit organization, you can maybe get special discounts or other deals. Call ahead to make sure they have everything you need or in case you need to pre-order.

What You’ll Need:
- 4 large eggs
- 4 C. sugar
- 4 t. pure vanilla
- 2 (#10) cans fruit cocktail
- 4 C flour
- 2 t. cinnamon
- 4 t. soda
- 4 t. salt
- 3 2/3 C chopped Walnuts
- 2 C. packed light brown sugar
- 2 t. cinnamon
- FOUR 18 X 26 X 2 inch pans
In very large mixing bowl, beat eggs and sugar together. Add vanilla, fruit cocktail, flour, 2 t. cinnamon, baking soda, and salt. Mix well.
Divide and spread into greased pans. Preheat oven to 325 degrees.
For cake topping mix together in a large bowl the walnuts, brown sugar, and 2 t. cinnamon. Sprinkle over cake batter of all 4 pans.
Bake at 325 degrees for about 45 minutes. Toothpick inserted should come out clean. Each pan should cut into about 80 pieces for about 320 pieces.
