Turnip salads

I have read somewhere that  Pliny the Elder had tought that “the turnip is one of the most important vegetables of the day”. Why is it so?! Probably because the turnip is rich in Vitamin C,Vitamin B 6, Calcium, Manganese and Copper. Not many people use turnip in every day recipes although this vegetable is tasty and fresh. It is ideal for making diets and can substitute some ingredients in your salads.3 years ago I started using the turnip and since then many of my friends use it with pleasure,too. You can try the following recipes and decide if they are healthy and good for you.

Recipe 1: Turnip and onion salad Preparation time:15 minutes;serves 3-4)

Ingredients:

500 gr turnip

1 onion

1 tablespoon oil

lemon juice

salt to taste

parsley cut in small pieces

black pepper powder

Method of preparation:

Grate the turnip and pour hot water on it.Dry the turnip and mix it with the onion which is also cut into small pieces. Add the oil,the lemon juice and the black pepper powder. Salt to taste and sprinkle with parsley.

Recipe 2: Turnip with mayonnaise

Ingredients:

400 gr turnip

50 gr mayonnaise

2 tablespoons yogurt

1 tablespoon cut parsley

1 teaspoon mustard

salt to taste

black pepper powder

Method of preparation:

Grate the turnip into medium pieces and mix it with the mayonnaise,the yogurt and the mustard. Salt it and sprinkle the black pepper powder. Stir well. Sprinkle the parsley.
