Vegetable snack: Simple and tasty

Vegetables are, of course, very important in a healthy diet. Vegetables provide needed vitamins, minerals, fiber, and other nutrients important to good health.

Things You’ll Need:

  • Raw vegetables; your choice
  • Extra-virgin olive oil
  • Vinegar; your choice of flavor
  • Lemon-pepper or other seasoning of your choice

Select the vegetables:
It is entirely up to you, which vegetables you like to munch in-the-raw. Clearly, some raw-veggies are more palatable than others, and only you know which ones you prefer. Select according to your mood; it’s that simple.

Some suggestions:
Celery stalks, baby carrots, radish, broccoli, cauliflower, snap-peas, zucchini or summer squash, cucumber, tomato, pepper. Of course, there are others; choose your own favorites.

Prepare the vegetables:
Wash, peel if necessary, and cut your selected vegetables into bite-sized portions. Place these in a bowl or on a plate.

Prepare the dip:
In another dish or bowl, pour approximately one eighth cup of extra-virgin olive oil.
Add approximately one quarter teaspoon of lemon-pepper, or standard salt and pepper, or other of your own favorite seasonings. You might wish to add some fresh or dried herbs like basil leaves, as well.
Add approximately three tablespoons of vinegar of your choice, or lemon juice.
Add approximately one quarter teaspoon of yellow or brown mustard.
Whisk mixture with a fork or small wire whisk until it blends into a semi-thick dressing.

Take a piece of celery or a baby carrot or a broccoli floret, and dip it into your mixture so a small amount of it sticks on the raw-veggie. Bite, chew and enjoy the tasty zing of the dip as it mingles with the fresh vegetable flavors upon your palate. Repeat with the other raw-veggies.`

Some other suggestions:
There are a number of raw-veggie enhancements you might like to include, to make this healthy snack even more exciting.
Try putting a dab of peanut butter on your celery before dipping it; you’ll be surprised at the unique combination of flavors!
Try a dollop of spicy or yellow mustard on your broccoli or cauliflower florets prior to dipping.
