Baked apples with carmel topping

Autumn is the time when we all enjoy the freshness of the harvest. Every thing from fresh garden vegetables, to fruits abound at this time of the year. Perhaps that is why my greatest cooking adventures and experiments occur this time of year. With so much fresh produce to choose from who could resist trying to create spectacular dishes from natures bounty.

Caramel apples have always been one of my sweet treats during this season. After a little experimentation combined with a bit of research I found away to serve caramel apples as desert for even the most elegant dinner.

Baked Apples with Caramel Sauce

Ingredients:

6 red apples

6 tablespoons butter

2 tablespoons cinnamon

¼ cup and 2 tablespoons water

1 10 oz package of caramels

sweetened whipped topping

1 small package of crushed peanuts

Preheat oven to 350 degrees farenheit

Core your 6 apples and placing in a baking pan. Add a bit of water to the bottom of the pan. In a small sauce mixing bowl combine butter and cinnamon. Mix thoroughly. Spoon butter mixture into the center of apples and bake for 30 to 35 minutes.

In a heavy sauce pan over low heat melt caramels with 2 tablespoons water stirring occasionally. When caramels are melted remove from heat and stir in ¼ cup sweetened whip topping. Pour over apples making sure some goes into the hole where you put the butter. Sprinke with nuts. You can also add a dollop of whipped topping to the top of the apple for a more elegant look.
