Chipotle grilled chicken – great for tailgates

I love grilling and I love tailgating. Here is a recipe that is sure to be a hit at your next tailgate or backyard barbecue. It is incredibly easy to prepare and grill. There are only 5 ingredients and they are readily available at any larger grocery store or even your local bodega. This recipe also works well with indoor grills like the George Foreman grill.



6 chicken thighs or drumsticks, skin removed

1 tablespoon of garlic salt

1.25 cups of Goya Mojo Chipotle sauce

1 large package of tortillas – corn or flour which ever you prefer

1 bottle of salsa verde or your favorite salsa as a condiment

1 large plastic resealable bag (zip-lock bag) (optional for marinating)


Prepare chicken: Place chicken in large resealable bag or container.

Pour the Goya Mojo Chipotle into the bag with the chicken. Sprinkle in the chicken with the garlic salt. Seal the bag and toss around for a bit. Let the chicken marinate until ready to cook. It is always best to marinate the chicken the night before, however it is not required.

Grill the chicken until the juices run clear; about 6-8 minutes per side.

Warm the tortillas over the grill, just until warm.

Lay tortilla flat on a plate, put some chicken on top of the tortilla and pour your favorite salsa as a condiment.


Note: Substitute your favorite low carb wrap for the tortillas for low carb dieters.
