There are basically 4 steps to make pad thai. First is preparing glass noodle. The second step is preparing pad thai sauce. The third step is mixing all ingredients together. The final step is seasoning.
The ingredients are a small bag of glass noodle, 2 tablespoon of tamarine juice or vinegar, 2 tablespoon of palm sugar or paste sugar,1 egg, 1 tablespoon of soy sauce or fish sauce, a quarter cup of olive oil, a half cup of water, 2-3 cloves of garlic, a cup of fresh bean sprout, a cup of cut chive leaf (cut about 1 inch long), a half cup of diced tofu, a half cup of chopped salted radish, half cup of dried shrimp (and/or boiled shrimp), a table spoon of crushed peanut.
Note: Beside shrimp pad thai, seafood pad thai is also popular among thai people. Fish, scallops, mussels, clams, squid and so on are usually added in seafood pad thai.
– Prepare glass noodle, follow instruction of preparing glass noodle on the package. Usually, soak in water for 30 minutes in room temperature.
– Prepare pad thai sauce, add half cup of water, tamarine juice, palm sugar, and soy sauce in hot pan (sauce pan is recommended) and then stir and mix until all ingredients mixed well. Add a little bit more water if the sauce gets too thick. The thickness should be about the thickness of syrup. Taste and season with tamarine, sugar or soy sauce. The original taste of pad thai is sweet and sour. Put the finished sauce in a bowl.
Note: Pad thai sauce can be prepared in advance in larger amount and keep it in the fridge for cooking more dishes of pad thai later.
– Add chopped garlic, chopped salted radish and diced tofu in hot olive oil in another pan. Fry garlic until garlic and tofu turns yellow and the radish smells. Put it aside and add egg and fry until it is not quite cook then put the glass noodle and stir mix with all the ingredients in the pan and then add bean sprout, chive leaf, dried shrimp, (and/or boiled shrimp) and then add the pad thai sauce. Stir and mix until all ingredients are mixed well.
– Season with vinegar, sugar or soy sauce. Add a teaspoon of dried ground red chilly for someone who likes spicy food.
Finally, serve with fresh chive leaf (cut about 4 inches long), fresh bean sprout, a half piece of lime, a tablespoon of crushed peanut on a side or on top. Sqeeze the lime on top of the dish and enjoy.
