How to Make Healthy Beans With Escarole Soup

This Is a tastefully and very healthy soup
that comes from one of the country that I love. In the house that I grew up back in Italy this soup was a winter soup also a chrismas time soup.  Healthy, delicious and goes with a quick preparation, in the traditional ” easy recipes for hard working families trying to have valuable time at the dinner table.  Also this soup recipe is very good for people on a diet ,has tons of dietary fiber and what is good for people on a diet? Fiber, and fiber is also really good for our hearth. And one more thing , also delicious for  vegetarian people


Things You’ll Need:

  • serving for 4-6 people
  • 2 cans of Goya cannellini beans
  • 4 fresh escarole harvest
  • olive oil 3 oz.
  • garlic 2 cloves

Step 1

Open the cans, wash the beans and let them cook in fresh 48 oz. of water (3 regular bottles) for about 15 minutes on a medium-low heat.

Step 2

Aside, clean, wash and cut in large pieces the escarole and let them soak for about 10-15 minutes in salted water, use your judgment for salt

Step 3

When beans are ready add olive oil, garlic salt and pepper and keep them on the medium-low heat, now drain the escarole and add them to the beans

Step 4

Let everything cook together for about 15-20 minutes, let the soup rest for about 10 minutes and serve (use your judgment for the soup to be not too hot not too cold)
