A simple method for something so tasty and versatile can be an ideal addition to an Indian meal or as a tasty treat for example.
- 1 ½ cup Whole-wheat flour (Whole meal)
- ½ cup Natural plain Yoghurt or make your own! click here for details
- 1 tsp Baking powder
- 1 Egg
- ½ tsp Ground cinnamon
- ½ tsp Vanilla essence
- 1/8 tsp Ground ginger
- 1 ½ cup Carrot peeled and grated ( rough or finely according to your taste)
- 1 tsp Baking soda (bicarbonate of soda)
- ½ tsp Salt
- ¼ Ground nutmeg
- 1/8 tsp Allspice
- ½ cup Raisins
- 1/3 cup Honey or brown sugar
- butter or light oil for greasing the baking dish
What you will need
1large bowl and 1 smaller bowl
2 baking dishes( for 12 large muffins 3 for small) or 12 top 18 muffin moulds (see the bottom of recipe for details)
If you wish to use this as a savoury accoumpaniment to an indian meal for example, I would reccommend removing the suguar from the recipe and adding a pinch more of salt to taste.
preheat the oven to 200oC or 390oF adjust your oven accordingly if it is fan assisted or commercial
Combine all dry ingredients topgether in the large bowl.
Mix wet ingredients separately in smaller bowl along with the with carrots and raisins.
Add wet to dry, stirring only until flour is moistened.
Spoon the mix onto a greased baking dish (allow room for growth) or into muffin moulds
place in the pre heated oven and bake for approximately 15 mins ( check after 10 minutes to see that the timing is correct).
Simple as that
the mixture should make about 16 to 18 small carrot muffins or 12 large muffins
