Chili is perfect for fall and winter weekends. I got my inspiration for this chili from Trader Joe’s. Of course I had to add a few other ingredients to make it my own. It is quick and simple. Most of the ingredients do come from Trader Joe’s, so I hope you have one near your neck of the woods. If not, I’m sure you can find similar ingredients are your favorite grocery store.
1 teaspoon of olive oil
1 medium onion, finely chopped
1 jalapeno pepper, seeded and diced (optional)
4 cloves of garlic, minced or crushed
1 pound of Turkey meat
2 cans of Trader Joe’s Marinated Bean Salad
1 jar of Trader Joe’s Chunky Salsa
1 can (15 ounces) diced tomatoes
1 can (15 ounces) of sweet corn
2 tablespoons of chili powder
2 tablespoons of paprika
½ teaspoon of ground cumin
Heat the olive oil in a large pot over medium high heat. Add the onions and jalapeno, cook until the onions are translucent. Add the garlic. Stir all ingredients together, making sure not to burn the garlic.
Add the turkey meat to the onions and cook until browned.
Add the Marinated Bean Salad, the jar of chunky salsa, the can of diced tomatoes, can of corn and stir everything together.
Add the chili powder, paprika and ground cumin. Stir until all ingredients are mixed together.
Reduce the heat to medium low heat and let simmer for another 10 minutes. Make certain to stir occasionally so it doesn’t stick.
Serve with alone or with sour cream and shredded cheese. Enjoy.
