How to Make Low Carb Zucchini Pizza

I know what your thinking; zucchini pizza? Before you snarl your nose up; it really is great, try it! And best of all it’s low carb and healthy.
Things You’ll Need:

  • 1-2 Large zucchini (6 cups shredded)

  • 1 egg

  • black pepper

  • garlic powder

  • onion powder

  • fennel seed

  • Italian seasoning

  • ground meat ( I prefer ground turkey)

  • 1 onion

  • 1 green pepper

  • Pineapple chucks(fresh or canned)

  • mushrooms

  • pizza sauce

  • shredded mozzarella cheese

  • parmesan cheese

  1. Start by preheating the oven to 350 degrees. Then brown your ground beef or ground turkey and season fennel seed, garlic powder, onion powder and pepper.
  2. Next wash and cut off the ends of the zucchini. Shred your zucchini either with a machine or the old fashioned way with a knuckle  busting grater.
  3. Shred your cheese and set aside for later.
  4. Take 5-6 cups shredded zucchini and add the eggs and some italian seasoning, stir real well.
  5. Put on lightly greased pizza stone and bake in oven for 15 minutes to set the egg and make it easier to work him. I’ve tried it without egg and it doesn’t stick together.
  6. While that is in the oven, chop the onions and peppers.
  7. After you take zucchini crust out of the oven start  building your pizza by putting pizza sauce on the zucchini crust. (It’s just like making a regular pizza.)
  8. Sprinkle with parmesan cheese.
  9. Put your onions and peppers on, add the mushrooms, the meat, and the pineapple. Top with the shredded cheese.
  10. Bake in oven for additional 15-20 minutes.
  11. Serve your zucchini pizza and enjoy!
