In today’s economic crisis, comfort foods that are cheap and easy are key. But if you’re like me, the same old spaghetti and tuna-noodle casseroles get boring after a while. Let me show you an easy way to switch up your family’s dinner menu with this layered spaghetti dish.
What you’ll need: 1 pound burger 1 jar spaghetti sauce 1 pound box spaghetti noodles 1 chopped onion 1 chopped green pepper 2 eggs beaten Parmesan cheese 2 cups shredded mozzarella or cheddar cheese
Step 1: Preheat oven to 350 degrees.
Step 2: Brown burger (I like to use turkey rather than beef.), onion and green pepper together in skillet. Add Italian spices to your liking. Drain off grease. At the same time, cook spaghetti according to box directions. For a healthy alternative, I choose to use wheat pasta.) Don’t overcook and be sure to drain well.
Step 3: Coat 13×9 baking pan with non-stick spray. Be sure to get sides too.
Step 4: Place pasta in bottom of pan. Pour beaten eggs over noodles and agitate for an even coating. The egg will cause the noodles to stick together forming your “pie crust”.
Step 5: Add browned burger over noodles. Press down gently with spatula to form a nice, flat layer.
Step 6: Pour spaghetti sauce of your choosing on burger. Again, make sure it is evenly distributed.
Step 7: Top with shredded cheese.
Step 8: Cover with aluminum foil. (I splurge for Reynolds Non-stick Foil because it really works and the melted cheese does not stick when removing.) If you’re on a tight budget, spray underside of foil with non-stick spray.
Step 9: Place in heated oven and bake for 30-40 minutes or until cheese is good and melted.
Step 10: Take out of oven, remove foil and sprinkle top with Parmesan cheese. Let sit 5 minutes before serving. This will allow for easier cutting and pieces will stay together when served.
Step 11: Serve with garlic bread, Texas toast or breadsticks of your choosing and ENJOY!
