Recipe For Easy Chicken Philly Sandwiches

Things You’ll Need:

  • 1 lb boneless, skinless chicken breasts
  • 1 large yellow or white onion
  • 1 large green pepper
  • 1 large red pepper
  • 1 package fresh, pre-sliced mushrooms
  • 6-8 white or wheat sub rolls
  • Mayonnaise or Miracle whip
  • 1 lb package of shredded mozzarella cheese

Dice breasts of chicken into small cubes and fry in a small amount of olive oil in a large frying pan. Sprinkle a little garlic salt on chicken and brown on all sides (approximately 4-5 minutes per side, flipping around often). Cook until there is no pink in the chicken whatsoever. Warm on low heat when finished.

Slice up onion, green pepper, and red pepper. Heat olive oil in a medium size frying pan and toss in onion, peppers, and mushrooms. Fry the vegetables until they are a nice golden brown. Add the vegetables to the chicken and cook all for a few minutes over medium heat. Be sure chicken and vegetables are fully cooked and a nice golden brown.

In a small frying pan, take about 1 cup chicken and vegetable mixture and transfer to small pan. Turn stove on medium heat and sprinkle mozzarella cheese over chicken, onion, peppers, and mushroom mixture. Pour a teaspoon of water onto hot pan and cover with a lid. This helps the mozzarella cheese to melt over the chicken mixture.

Using a spatula, transfer chicken, onion, pepper, and cheese mixture onto sub roll. Be sure to have spread mayonnaise or Miracle Whip over roll before hand. Spread the chicken philly mixture over entire inside of roll so that all the roll is covered. Repeat steps 3 and 4 for each family member and enjoy! Makes about 6-8 servings.
