Things You’ll Need:

- 1) 6 Large zucchini if possible or 4 pounds.
- 1 cup of water
- 1 garlic clove.
- 2)olive oil, 1/3 of a cup.
- 3)Fresh basil.
- 4)(2) 1 lb cans of crushed tomato.
- Grated parmigian cheese
- 2 cups of sunflower or canola oil.
- 1 ball of mozzarella cheese ,about a pound.
- salt and pepper.
Wash and dry the zucchini. Cut them the round way thin, but not too thin. The slices should be about 1/8 of an inch.
In a deep frying pan, if you don’t have a deep fryer, pour the 2 cups of vegetable oil and let it get really hot. A deep fryer is good to have because it is safe and you can fry outside, on the deck and the house does not get the heavy fried odors of oil and food.
In another deep pan, pour the olive oil with sliced fresh garlic and let it get golden. When the garlic is ready, pour in the 2 cans of crushed tomatoes and 1 cup of water to mix in. Salt and pepper to taste. Add basil if you like. Don’t forget: the salt brings out all of the flavors. Simmer the sauce on low for at least 30 minutes. The longer you cook the sauce the better it will taste.
Now it’s time to fry the zucchini, let them get golden brown, drain and place them in a plate with paper towels. Every layer of zucchini should be divided by paper towels so they dry a little more. Also cut the mozzarella in thin slices.
Once finished frying, get an horizontal pyrex pan or something that goes in the oven and start pouring about 5-6 tablespoons of tomato sauce in the bottom of the pyrex to entirely cover the bottom. After that, add the first layer of fried zucchini even 2 layers to make sure the plate gets covered with zucchini.
When you see that the zucchini covers the bottom of the pan, cover with sauce, salt, pepper, basil, fresh parmesan cheese and mozzarella.Do the same 1-2 layers at a time with the rest of the ingredients (zucchini, sauce, mozzarella, basil. Make sure that the last layer ends with the mozzarella, grated parmesan cheese and sauce.
Bake the zucchini parmesan at 350 degrees for about 30 minutes, or until heated all the way through. Let it stand for 10 minutes before serving.
