Easy Spring Rolls that you can do ahead.
1 package of lumpia wrappers or spring rolls wrappers (approx 30 wrappers in each package)
1/2 pound ground beef or turkey
1 cup of frozen mixed vegetables (corn, green beans, carrots)
1clove garlic minced
garlic salt and black pepper to taste
Oil for frying
Saute ground meat with minced garlic, garlic salt and black pepper. Drain meat. Add frozen mixed vegetables. Heat through. Add more garlic salt and black pepper as needed.
Let mixture cool before wrapping in egg roll skins.
Take one wrapper at a time. On one end of the eggroll wrapper place a teaspoon of mixture.
Most eggroll skin packages have instructions on how to roll your eggroll.
Once your eggrolls have been rolled in a neat tight roll you can fry them up right away in hot cooking oil or you can freeze them for later use. Usually stores well up to one month.
I have found that if I make them ahead of time , I can always defrost it when guest come over unexpectedly. It sure is a crowd pleaser.
Dip eggrolls with your favorite dipping sauce.
Here is my recipe of homemade dipping sauce.
1/2 cup vinegar
3 cloves of garlic chopped
Chop garlic into small pieces
pour half cup of vinegar into serving bowl. Add chopped garlic and black pepper to taste.
There ya go! the sauce is easy and can be made with ingredients usually found within your kitchen.
