How To Make Extremely Easy Butterscotch Fudge

Now that the summer is winding down, it’s time to start thinking about the holiday season. A holiday tradition in a lot of families is Fudge. Chocolate fudge is always a necessity for the success of any holiday gathering, but Butterscotch fudge will make it THE most memorable event. What makes this recipe great is that it is made in the microwave!

Things You’ll Need:

  • 9 x 11 pan
  • Spray oil
  • oleo
  • sugar
  • evaporated milk
  • butterscotch
  • peanut butter
  • vanilla
  • marshmallow creme
  • nuts – optional

Gather your ingredients. 3 c. sugar, one stick of oleo, 5 oz. can of evaporated milk, 12 oz. bag of butterscotch chips, 3/4 c. peanut butter, one jar marshmallow creme, 1 tsp. vanilla, 1/2 c. nuts optional

Spray your pan with the spray oil to prevent sticking. You can also use spread oil by hand. Keep it thin!

In a large microwavable bowl, melt the oleo. When melted, stir in 3 c. sugar and evaporated milk. Stir thoroughly.

Heat on high in microwave for three minutes. Stir. Heat three more minutes. Stir. Heat three more minutes. Remove from microwave. The bowl will be hot.

Quickly add the butterscotch chips and stir until melted completely. Butterscotch takes longer to melt than chocolate. Stir quickly so that the mixture doesn’t cool too much. When melted, stir in the peanut butter and vanilla.

When the above is mixed in completely, stir in the marshamallow creme. This is going to get a little hard to stir, but not too bad. If you’re using nuts, stir them in now.

Once the mixture is stirred completely, put it in the pan and smooth the top. Let cool on the counter. Cut into squares, size of your choice. Makes about 3 1/2 lbs. of fudge.
