How To Make an Acai Berry Energy Drink or Energy Snack

In the past couple of years, the Acai (ah-sah-ee) berry has been hailed as a super food. It comes from the Acai Palm which grows in Central and South America. It thrives in swampy or flooded areas. The berry is said to increase energy, aid in weight loss, improve your digestion, improve the appearance of your skin, reduce your cholesterol and even improve your sexual performance. The FDA has not evaluated these claims. Whether they are true or not remains to be seen. The berry is generally regarded as safe and under most circumstances fruits are good for you!

The acai berry’s integrity will deteriorate with heat. Always keep your product refrigerated and never cook. It’s good as ice cream topping or as an ingredient in smoothies.

Your local health food store will carry Acai juices and blends. As of this writing, most traditional supermarkets were not carrying these products, though with its rising popularity, you will probably start seeing them soon.

Here are two easy recipes using acai juice or pulp.

<u>Acai Smoothie</u>

  • 7 oz Acai juice
  • ½ c. soy milk or juice
  • fruit (one banana, one half apple or one cup other fruit)

In a blender, blend all of your ingredients together. Pour into a glass and top with granola, sliced fruit or whipped cream.

You can also add one half cup yogurt or one half cup ice. Frozen acai pulp may be used in place of the juice.

<u>Energy Bowl </u>

  • 8 oz. Acai puree
  • 8 whole strawberries (fresh or frozen)
  • 1/4 cup plain yogurt
  • 1/4 cup soy milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup granola
  • 1/2 cup fresh berries or other fruit, your choice

Blend, in a blender the acai puree’, strawberries, yogurt, soy milk, and vanilla for 1 minute, or until smooth. Pour this blended mixture into a bowl and top with granola and fruit. Serve cold.

You may also use crushed cookies instead of granola. You can substitute another fruit such as a banana for the strawberries.
