How to Make Healthy Breakfast Burritos

Everyone loves a quick and filling breakfast burrito in the morning, but we hate the way we feel about ourselves after we down a greasy, calorie packed, high fat version from a fast food drive thru on the way to work. This recipe gives us a healthy and tasty alternative that can be made ahead of time and stored in the freezer or fridge. 
Difficulty: Moderately Easy
Things You’ll Need:
Eggs – I use the liquid egg whites for this recipe to make it even healthier.
Frozen Hash browns like Ore-Ida Southern Style
2% Shredded Cheddar Cheese

Step 1

In a skilled, cook hash browns according to package directions.

Step 2

Liquid Egg Whites

In another skillet, scramble eggs. I like to use the box of liquid egg whites because they are healthier and just as delicious.

Step 3

Shred the cheese, or buy the pre-shredded cheese to save a little time. The 2% Kraft cheese is really good, and you can’t taste the difference, so it really helps keep the fat content down.

Step 4

Assemble burritos by laying out tortilla and layering in eggs, hash browns, and cheese. Roll up tightly so nothing falls out.

Step 5

Place on plastic wrap and seal up both ends. These can be stored in the refrigerator or freezer so you can grab one each day on your way to work and just zap it in the microwave.

Tips & Warnings
These have only 9 grams of fat and 350 a piece, whereas a popular fast food version contains 34 grams of fat and 550 calories.
You can also add sausage or bacon if desired. Turkey sausage and bacon are healthier than pork and a tasty option as well.
Hot sauce or salsa is DELICIOUS on these.
