Things You’ll Need:
- One pound ground chuck.
- One pound ground pork
- Four ounces pancetta
- Two short ribs
- Two cans plum tomatoes
- Two tablespoons tomato paste
- One medium sized yellow onion
- 4 cloves garlic
- 3/4 cup red wine
- salt and pepper
- one tablespoon yellow mustard
Brown the ground beef and pork together in a large sauce pan or crock pot. Skim most of the fat and dispose.
Add short ribs and braise til browned. Add chopped pancetta and mix well together.
Chop the onions and garlic and add to meat mixture. Cook for five minutes and mix frequently to blend the onions and garlic to the meat.
Add the two cans of plum tomatoes, tomato paste, and red wine. Mix well.
Add mustard, salt and pepper to taste and simmer for a long time! This should cook on low heat for 4 hours minimum. Don’t rush it. At the end, add salt after testing it if needed. Pour over your favorite pasta ( such as tagliatelle, spaghetti, or similar. Enjoy!
