Moussaka with tomatoes

Moussaka with tomatoes is a very delicious dish suitable for those of you who are making diets. The time for its preparation is an hour. The time for baking the dish is about 30-40 minutes. The recipe serves 7-8.

Ingredients:

500 gr potatoes

1 vegetable marrow

1 eggplant

1 table spoon margarine

400 gr soya butter

2 table spoons lemon juice

Spices depending on your taste

300 gr tomatoes

400 gr vegetarian meat

Ingredients for the top of the dish:

3 table spoons yoghurt

3 eggs

1 table spoon flour

1 table spoon white cheese

Method of preparation:

First of all you have to peel the potatoes, wash them and cut them into small cube-shaped pieces. Fry them in a frying pan full with oil for about 10 minutes. The eggplant and the vegetable marrow should be washed and cut into slices. Place them into a frying pan, then pour some oil and fry them for about 10-15 minutes. The onion should be cleaned, chopped into small pieces and fried into margarine and some water. After 10 minutes you have to add the flour and the soya butter. After 5 minutes you can add the lemon juice. Meanwhile wash the tomatoes and peel them. Chop them finely and add them to the onion. The vegetarian meat should be cut into small pieces. The next thing you have to do is to place the ingredients into a baking pan with oil. You can start with the vegetable marrow, then the eggplant, the vegetarian meat, followed by the potatoes and the mixture with onion and tomatoes. In a bowl mix the yoghurt, the beaten eggs, the flour and the white cheese. Stir well and pour this mixture into the baking pan. This wonderful dish could be baked for about 30-40 minutes. The dish could be served with green salad. Enjoy with a glass of beer!
