Feel Like Italian Food Tonight! Great Alavodka

 Lisa’s ALAVODKA

For 3-4 people (I usually double you can always freeze for another week easy dinner)

(you can add a salad to make a complete meal (maybe a nice antipasto)

(If you have lot of company you can add sides of meatballs & or Italian sausage)

1 Shot Vodka  (use whatever you have in the house)

1 lb. of pasta cooked.. penne (I use the brand that stops cooking so I don’t overcook)

1 can whole tomatoes (I use an Italian brand for rich tomato taste)

1 tsp basil  (I use dried but use fresh for more taste)

1 tsp parsley  (I use dried but use fresh for more taste)

1 tsp salt

1 tsp pepper

1/2 cup butter

1/2 cup parmesan cheese  (use a good grated cheese or grate you own for a great flavor)

½ cup heavy cream

1 medium onion diced (my daughter does not like to bite into onion so I grate or cut real fine so it cooks up)

Olive oil to cover bottom of pot      (evvo)

Cook onion to golden brown in the oil

Put tomatoes, basil, parsley, salt & pepper in blender puree till smooth

Add to browned onions in pot

Add butter, cheese and heavy cream

Cook 40 minutes on simmer …. pour over cooked pasta (Stir carefully as it tends to break up)

Garnish with some more grated cheese and parsley if you like

You can make this ahead and leave on stove with foil on top for a couple of hours. Heat when ready to eat. It may dry out so add a little cream or half and half if needed. You can enjoy your company and have a delicious meal too!!
