Kale (part of the cabbage family) is one of the most nutritious vegetables out there. It is categorized as a super vegetable by WebMD.
3 tbs Olive oil
1 bunch kale chopped
1.5 boxes chicken stock
2 lg carrots chopped (or 1 cup shredded carrots)
3 stems celery chopped
2 leeks chopped (or 2 med onion. Leeks are just a delicate flavored onion)
2 pinches salt
2 cloves Garlic
Add olive oil to pot and add carrots, celery, leeks, salt and pepper. Stir to coat the veggies and sweat on low heat until onion is translucent / softened (should be about 15 minutes). Add the stock, kale, and garlic then cover, and bring to a boil. Reduce heat and simmer for 30 to 45 minutes, stirring occasionally. Add oregano towards or at the end.
