Kale (part of the cabbage family) is one of the most nutritious vegetables out there. It is categorized as a super vegetable by WebMD.

Kale Soup
3 tbs Olive oil
1 bunch kale chopped
1.5 boxes chicken stock
2 lg carrots chopped (or 1 cup shredded carrots)
3 stems celery chopped
2 leeks chopped (or 2 med onion. Leeks are just a delicate flavored onion)
2 pinches salt
2 cloves Garlic
To taste:
Black pepper

Add olive oil to pot and add carrots, celery, leeks, salt and pepper. Stir to coat the veggies and sweat on low heat until onion is translucent / softened (should be about 15 minutes). Add the stock, kale, and garlic then cover, and bring to a boil. Reduce heat and simmer for 30 to 45 minutes, stirring occasionally. Add oregano towards or at the end.

Healthy food can still taste great! Reduce your blood cholesterol and feel better with these innovative low cholesterol, and low fat recipes.

I started eating low fat and cholesterol following some blood work results showing my cholesterol at 230. Heart attacks run in my family so I decided to get my blood cholesterol levels in line. Following just 3 months of eating better and following simple and sound USDA guidelines my cholesterol is now at an excellent 180, without the aid of prescription drugs.

My Wife and I both love food. All food. We refused to live on the traditional boring low cholesterol foods such as cottage cheese and canned apricots for breakfast every morning.
