No Bake Cherry Cheesecake

1 6 oz Ready Crust Graham Cracker Pie Crust
1 8 oz package cream cheese, softened
1 14 oz can Eagle Brand sweetened condensed milk (not evaporated milk)
1/3 cup lemon juice from concentrate
1 tsp vanilla extract
1 21 oz can cherry pie filling, chilled or any other fruit in season

With mixer, beat cheese until fluffy. Gradually beat in Eagle Brand milk, until smooth. Stir in lemon juice and vanilla. Pour into crust. Chill at least 3 hours.

After chilled, top with pie filling. Refrigerate leftovers.

Cheesecake Fudge Recipe

1/4 cup butter
2 1/2 cups granulated sugar
1 (5-ounce) can evaporated milk (or 2/3 cup)
3 cups miniature marshmallows

1 (12-ounce) package premium white chocolate chips
2 teaspoons vanilla extract

1. Line a 9-inch square baking pan with lightly buttered waxed paper or aluminum foil. Set aside.
2. Combine butter, sugar, milk and marshmallows in heavy 2 1/2 to 3-quart saucepan; bring to full rolling boil on medium heat, stirring constantly. Continue boiling for 5 1/2 minutes on medium heat or until candy thermometer reaches 234*F (110*C), stirring constantly to prevent scorching. Remove from heat.
3. Stir in cream cheese and white chocolate chips until melted. Add vanilla and mix well. Pour into prepared pan. Cool at room temperature. Cut into squares.

1 container Tofutti brand cream cheese alternative
12 oz or one package silken tofu
1/3 cup soy milk
1/3 cup corn starch
1 tsp vanilla
2 Tbsp maple syrup (optional)
2/3 cup powdered sugar
1 Tbsp lemon juice
3 tsp egg replacer
2 Tbsp water
2 Tbsp vegetable oil
1 pre made pie crust

Preparation: Pre-heat oven to 325 degrees.

Mix the egg replacer with the water in a small bowl until smooth and add to blender. Blend together all ingredients, except for oil and crust at medium speed until smooth. Mixture should be thick and creamy. Slowly incorporate oil by pouring in at low speed.

Pour into pie crust and bake 45-50 minutes or until just barely firm. The cheesecake will not change color or rise up, but don’t be afraid to take it out of the oven! Allowing it to cool and refrigerating or freezing slightly before serving will firm it up to the proper texture.

Drizzle with chocolate syrup or garnish with fresh fruit as desired.

1 fluid ounce Cranberry Juice or Cranberry Black Cherry Juice
