There are a few ways in which to prepare Chicken Kiev. I have one pretty good recipe that is very easy to make and simply delicious. You will need, 2 pounds of boneless chicken breasts, 1 pound of butter, 2 cups fresh parsley, 1 cup of grated Romano cheese, salt, pepper, breadcrumbs, and some twine or toothpicks.
First, wash chicken thoroughly; you may have to pound chicken out a bit to make sure it is very thin. Next, take chicken pieces and lie flat on a baking dish and place aside. Take 2 sticks of butter and cut into about 8 even pieces, take one piece of butter per chicken piece and place on top of chicken. Next, season with salt, pepper, cheese, and parsley. You now must roll the chicken around butter and other ingredients until completely covered.
Next, take twine or about 3 toothpicks and make sure your chicken is sealed with ingredients inside. When you finish stuffing and rolling all chicken pieces, you then want to sprinkle chicken with olive oil and add bread crumbs to top and sides of rolled chicken pieces. Place in oven at 350 degrees for 65 minutes.
Remove chicken and let sit for about 5 minutes prior to serving. You can remove toothpicks and twine and serve. If you enjoy Chicken Cordon Blue, you can follow the same recipe except you need to substitute the butter with sliced ham and add Swiss cheese. In addition, you can always add some of own ingredients to make the chicken extra special.
