This healthy Swiss Potato and Leek Soup Recipe from Switzerland is a very delicous home-made soup. It is a very old recipe. Back in the olden days, it was common to have soup and bread for dinner, especially if it was a hardy soup. This soup recipe is quite filling. You may want to serve it with a hardy piece of bread. It is a soup dish that is commonly served in the evening during cold winter months. It doesn’t take that long to prepare.
600 g potatoes, peeled and cubed
1 leek stalk, peeled and sliced
40 g butter
Heat butter in big soup pot. Add potatoes and leek.
1 glove of garlic
Press garlic and add juice to potatoes and leek.
2 dl of white wine
Pour the white wine over the vegatables.
8 dl of chicken broth or vegatable bouillon
Add chicken broth or vegatable bouillon to vegatables.
Majoram, salt and pepper.
Taste the soup with majoram, salt and pepper. Simmer it for about 20 minutes. Remove from heat and let it cool down a little bit. Now blend everything with a mixer or blender until it is fairly smooth. Return to heat now and simmer for a few more minutes.
12 thinly-sliced pieces of bacon
Fry the bacon in a seperate skillet. Don’t add any grease. Fry the bacon until it is very crispy. You can leave the bacon in one piece or break them apart in smaller pieces. Serve the soup in individual soup bowls and decorate them with the individual bacon pieces. This soup should be served hot.
