European Potato Salad

This European Potato Salad is a true Potato Salad Recipe.  It is from my Austrian Mom’s kitchen and a favorite at every grill party.

10 medium-sized potatoes

Cook the potatoes until soft.  Don’t overcook them though.

2 tablespoons of olive oil

2 tablespoons red wine vinegar

2 tablespoons cream

3-4 tablespoons mayonnaise

1 teaspoon ketchup

1 teaspoon Dijon mustard

1 pinch salt

little black pepper

dill, marjoram, parsley

Mix the above ingredients well in a big salad bowl.

0.5 onion

1 clove garlic

0.5 celery stalk

1 chive

Chop onion, garlic, celery stalk and chive as fine as you can and add them to potato salad sauce.  Mix well and set aside.  Peel the cooled down potatoes and cut them into slices.  Make sure the potatoes aren’t overcooked.  They should still have a bit of firmness and shouldn’t crumble in your hands. Pour the salad dressing over the potatoes and slowly mix it up.  Be sure not to overmix as this would only mash the potatoes. The potato salad should be cooled downfor about 1-2 hours before serving it.  I usually set mine in the refrigerator for about one hour.  Some people don’t cool theirs.  You can try it both ways and go with the version that you prefer.  If you recipe seems too dry, just add a bit of olive oil and vinegar.
