Fennel Salad

This is a Swiss Salad Recipe and all ingredients are according to European Measurements.  You will find that these measurements can be easily calculated on modern scales or on measurement conversion websites.  I found this recipe in my Mom’s personal collection of Traditional European Recipes. This is a great salad recipe that is healthy and goes well with grilled meat.  It is also perfect for Vegetarian.

2 dl sour cream

1 teaspoon lemon juice

0.5 teaspoon ketchup

1 teaspoon salad spice Combine sour cream, lemon juice, ketchup and salad spice into a salad bowl and mix well. You may substitute the sour cream for low fat sour creme.  To keep the orginal taste, it is best not to substitute.

2-3 medium-sized fennel Cut the uncooked fennel in half and then again in very thin strips.  Set aside.

1 sour apple Peel the apple and cut it in very small cubes or shred it.  If you shred it, the salad will be juicier. Add them to the fennel.

2-3 figs Cover figs with water and let them sit for approximately 15 minutes. Afterwards   cut in thin strips and add them to the other ingredients.

1-2 tablespoons walnuts Cut walnuts in small pieces.  Add them to the remaining ingredients once you are ready to serve.  This will stop the walnuts from absorbing too much moisture and changing their texture.

When you are ready to serve, add the walnuts to the rest of the ingredients.  Mix it with the previously prepared fennel salad dressing and enjoy.
