Many places offer nachos these days, but none come close to my Buenos Nachos. This is a pretty quick and very easy dish to throw together. It is defiantly a crowd pleaser.
1 lb lean ground beef
1 stock of green onion (scallops)
3 medium tomatoes
1 small can of diced black olives
1 large bag of round corn tortilla chips
1 large can of refried beans (or 2 small)
1 box of Velveeta Cheese
1 large container of Sour Cream
1 tablespoon of butter
1/4 cup of milk
PREP TIME: 15 minutes to open cans, cut onions and tomatoes
COOK TIME: 15 to 20 minutes
TIME TO TABLE: 45 minutes
Dice green onions, and tomatoes place chips on plates, open cans
Start by putting Velveeta (use what you need for how many people I use about half for 4 people), butter and milk in a sauce pan, use a double boiler if you have it, otherwise be sure to use low heat. Or if you prefer you can use a microwave, be sure to stop and stir often to make sure it does not scorch the cheese. Once the cheese is creamy and smooth place on low heat until beans and beef are ready. Add a bit more milk or butter if needed, cheese should flow easily off a spoon so you can poor over chips.
As the cheese gets started, put your refried beans in a pot, add about a half a cup of water, we want the beans to easily flow over the chips. Place on MED heat.
Place ground beef in a frying pan on MED to HIGH heat, use spatula to break down to fine ground beef. Cook until brown and done, drain any excess oil/fat.
Assembly of your Nachos Piled High
With chips on plate use a ladle to pour cheese on chips, then spread some refried beans over the cheese, next some ground beef, put some sour cream in the middle, spread some green onions on top with some tomatoes and black olives.
Oh yeah! NACHOS! Enjoy.. I sure do.
