Coca Cola Cake is moist and delicious!

Coca Cola Cake is a Chocolate Dream.

You will be dreaming about it too after you taste it. It is quite addictive. The last time I made it for a party, the Sheriff and the President of our local Capital City Bank were literally fighting over the crumbs. I thought there was going to be a riot when it was gone.

This is a great cake for parties and entertaining!
It is a very moist cake and is prone to crumbling, but it’s so good–nobody will care. To make it a little less messy, you can do cupcakes instead. For regular size cupcakes, I recommend using paper cups, filling them 2/3 full, and then spraying the top of the cake pan with a cooking spray, i.e. Pam, so that there is no mess if they overflow. I would also decrease the cooking time to 20-25 minutes. Miniature cupcakes would also be a nice touch for a more upscale party. For those I would put 2 tablespoons of batter and decrease the cooking time to 10-15 minutes.

This desert is great for Halloween and I am sure there are some artistic folks out there who could come up with some great decorating ideas for them. For Valentine’s Day, you could do something as simple as putting little hearts on them.

Now for the recipe!


2 cups plain flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon baking powder
dash of salt
3 tablespoons cocoa
2 sticks margarine
1 cup cola
1 1/2 cups miniature marshmallows
2 eggs, beaten
1/2 cup buttermilk
1 teaspoon vanilla
Preheat oven to 350°. In a large mixing bowl combine all the dry ingredients except the cocoa. Heat margarine, cola, cocoa, and marshmallows to a boil. Take off heat immediately and pour over dry ingredients. Combine thoroughly. Beat with mixer at low speed for 2 minutes. Add eggs, buttermilk, vanilla, and beat well at medium speed for 2 minutes.

Pour into 13x9x2 inch greased and floured cake pan.

Bake 35 to 40 minutes at 350°. Cake is done when toothpick inserted in middle comes out almost clean (this is a moist cake). Let cake cool before icing it.


1/2 cup margarine
3 Tablespoons cocoa
6 Tablespoons cola
1 box powdered or confectioner’s sugar
1 cup pecans (chopped)
Heat margarine, cola, and cooa to a boil. Immediately remove from heat. Add sugar and nuts and beat well.
