How To Make Lucky Charms Crispy Treats: Great For St. Patrick’s Day and All Year Round!

By changing up an old classic Rice Crispies recipe, you can create a St. Patrick’s day treat that’ll go over on any day of the year.  Quick and easy to make, fun to look at and absolutely delicious…what more could anyone ask for in a yummy snack or dessert? Lucky Charms Crispy Treats are sure to please!

You’ll Need:

  • 1/4 cup butter or margarine
  • 36 large marshmallows (or approximately 1/2 of a 454g package)
  • 3 1/2 cups of crisp rice cereal (such as Rice Crispies)
  • 2 1/2 cups of Lucky Charms cereal
  • 1/4 tsp vanilla Extract (optional)
  • Green food coloring (optional)
  • Non-fat butter-flavored cooking spray
  • Cake pan or square container
  • Medium-large pot
  • Wooden spoon

In the pot, melt the butter or margarine over low-medium heat, stirring frequently.  After it is completely melted, reduce the heat to low.

Add the marshmallows, and use the wooden spoon to the stir them. The marshmallows and the butter will begin to melt together. Stir constantly until the marshmallows are completely melted. Do not leave the stove unattended at any time.  Butter and marshmallows can melt very quickly and can just as quickly become a fire hazard.

If desired, add 1/4 teaspoon of vanilla extract and stir in.

If you’d like your treats to be green (or any other color), add a few drops of food coloring to the marshmallow mixture and stir until the entire batch is a uniform color again. Remove pot from heat and turn off the stove.

Add the rice crisp cereal and stir quickly, but gently, until the marshmallow is completely and evenly coating the cereal.

Add the Lucky Charms cereal (including the colorful marshmallows) and gently fold and stir it into the rest of the crispy rice cereal and marshmallow until all ingredients in the pot are evenly coated.

Spray your pan with the non-fat butter cooking spray, then gently spoon the cereal/marshmallow mixture into your pan and use the wooden spoon to press it out to the sides, evenly.

Let it cool for 30 minutes or so, and then slice into pieces of the desired size.
